Ellen’s Cheeseburger Pie

1 lb ground beef
1 cup finely chopped onion
1/2 tsp salt
1/4 tsp pepper
1 1/2 cup milk
3/4 cup Bisquick
3 eggs
1 cup shredded cheese

Heat oven to 400. Grease cake pan. Brown beef and onion; drain grease. Stir in salt, pepper. Spread in pan. Blend milk, Bisquick and eggs until smooth. Pour over meat. Bake 25 min (knife comes out clean). Top with shredded cheese. Cool 5 min.

Ellen’s Soft Granola Bars

3 cup quick cooking rolled oats
1/2 cup brown sugar
1/4 cup wheat germ (optional)
1/2 cup butter
1/4 cup honey
1/4 cup corn syrup
1/2 cup chocolate chips
1/2 cup shredded coconut

Combine oats, sugar and wheat germ. Cut in butter until mixture is crumbly. Stir in corn syrup and honey. Mix well until combined. Stir in chips and coconut. Press into greased pan. Bake at 350 for 20-25 min or until golden brown. Let cool for 10 min. Cut into bars. If you use a 9″ square pan, bars are thick. If you use a 9″ x 13″ pan, bars are thinner. Your choice. You can use 1/2 cup honey and omit corn syrup.

Ellen’s Focaccia Bread Dough (for pizza rolls, etc.)

1 tbsp yeast (regular)
1 tsp sugar
1 cup warm water
2 1/2 cups flour
1 tsp salt
1 tbsp olive oil

Dissolve yeast and sugar in warm water and let stand for 10 min until foamy. In large bowl combine flour and salt. Stir in yeast mixture and 1 tbsp olive oil. Mix well to make a soft dough. Knead dough 5 min adding more flour if needed, so dough is soft but not sticky. Place dough in a greased bowl and turn to grease top. Cover and let rise for 45 – 60 min. Roll dough out as pizza crust. Put toppings on and then roll up like cinnamon rolls. Cut 1″ slices. You can use as pizza crust or make bread sticks or garlic fingers.
